With a month of winter still ahead of us, now is the time to sample some of Midland’s best soup options, though if you ask us, every season is soup season.

Noodle House
Hand Pulled Noodles.
Looking for a ramen place in Midland to try out? Hit up Noodle House in Central Midland for one of their house-made noodle bowls. The ramen, both beef and chicken, come with noodles crafted before your eyes. The attentive staff contributes to a welcoming atmosphere and it’s an unexpected culinary gem in town.
The spicy beef noodle soup is deliciously cooked, with thinly sliced pork boasting a perfect blend of fat and lean meat, and enough broth for two bowls.
Pro tip: Their dumplings are raved about as well, order a side (or two).

Mulberry Cafe
Timeless.
The combo of Tomato Basil and Grilled Cheese is classic for a reason, the only real question is: “To dunk or not to dunk?” We vote dunk. This crowd favorite is offered daily at Mulberry Cafe, along with their equally popular Enchilada Soup. Need more? In addition to the above, there is always an additional Soup of the Day to choose from. Talk about spoiled for choice! With their large selection of fresh salads, it is easy to meet your health goals here. Plus you can choose from wraps, sandwiches, burgers, and coffee.
Pro Tip: Find it on the ground floor of Frost Bank where the former Taste 508 was located.
Thai House
Spicy and Savory.
Thai House offers a curry menu with a mix of delicious options that cater to different tastes. If you're into spice, the Red Curry with its bold chili pepper flavor might be your pick. The Green Curry is a zesty mix of green chili, Thai basil, and kaffir lime leaves for those who prefer something refreshing. Try the Massaman Curry for a rich blend of coconut milk, peanuts, and sweet potatoes, and carrots.

Sapporo Sushi & Bar
It’s all about that broth.
When asked why Sapporo Sushi & Bar became a favorite in Midland so quickly, owner Lily Chen said it all boils down to the broth. Each of the different batches takes 10-18 hours of simmering to complete. There is chicken or pork based broths on their current menu. The long and slow cooking process of the meat-based options results in a nutritious bone broth which many patrons choose to purchase for its rich supply of vitamins, minerals, and collagen.
A crowd favorite is the Spicy Tonkatsu Ramen consisting of BBQ pork, marinated egg, baby spinach, bean sprouts, black mushrooms, nori, and pork broth. You can also personalize your dish by adding additional garnishes like eggs, kimchi, seaweed, extra meat, and the always popular chashu (pork belly).
Pro tip: Rice noodles can easily be subbed for a gluten-free option.

Bites at the Vineyard
Perfect pairing of soup and sandwiches.
Bites at the Vineyard offers several different soup options, all made in house. Alongside one of their delicious hot or cold sammies, a cup of soup just hits differently during the fall and winter months. Broccoli Cheddar cheese, a creamy Green Chile Pulled Pork stew, and a classic Tomato Basil normally grace their menu.
They also serve a hot sandwich called The Buzz, which is a roast beef sandwich on a toasted baguette served with a side of hot au jus. While not technically soup, we can’t help but include it since broth is broth at the end of the day.
Located near Greentree Country Club in the Vineyard Office Park, this lunch place is a quick stop after a game of morning golf.
Pro tip: They offer family style meals meals for delivery and pickup on nights and weekends, and often hot soups are on that menu.
